Put away the peeler! We’re making skin-on mashed potatoes

Serves 4

WHAT YOU NEED:

1 pound unpeeled potatoes, cubed

8 ounces Roasted Garlic, Basil, and Parsley Banner Butter (4/5 of a round)

1/8 cup whole milk

2 tablespoons sour cream

Salt and pepper to taste

WHAT TO DO:

Bring a pot of lightly salted water to a boil.

Add potatoes, and cook until tender, about 15 minutes.

Drain potatoes, and transfer to a bowl.  Add Roasted Garlic, Basil, and Parsley Banner Butter, and mash with a potato masher or electric mixer until potatoes are starting to become smooth.  Add milk and sour cream and mix to desired texture.
