PREPARATION TIME:  30 minutes

INGREDIENTS:

Penne (I like organic but use the brand you like)
Unsalted Banner Butter, 1-3 tbsp depending on amount of pasta
Fresh Parsley, chopped (½ cup)
Roasted Peppers, chopped (from jar – ½ cup)
Peccorino Romano Cheese or Parmesan, grated (¼ to ½ cup depending on amount of pasta)
Garlic, chopped finely, 1 clove (optional)
Salt & Pepper, to taste

Optional:  Add grilled chicken, tuna, or salmon

INSTRUCTIONS:

Cook penne rigate per package instructions.

Most Italians prefer pasta cooked al dente for easy digestion and better blood sugar control.  Pasta is a high carbohydrate food but pasta in itself is a lower glycemic index food. You are probably wondering what is al dente?  The literal translation is “to the tooth.”  Al dente pasta will feel firm, not crunchy, when you bite down with your front teeth. You can also break a piece of pasta in half and look at the cross section-al dente pasta is mostly cooked with a small core of uncooked pasta running through the middle.  In the United States, pasta is rarely served al dente except in high-end restaurants.  Most Americans prefer pasta cooked longer.  The length of time pasta is cooked can have an effect on blood glucose – a minute past al dente will make a difference…the softer the pasta, the higher the glycemic index.   You decide how you like your pasta cooked–just don’t overcook pasta!

Drain the pasta in a colander, but do not rinse.

In a bowl, add cooked penne, add Unsalted Banner Butter and toss to coat pasta.

To the pasta mix, add chopped Italian parsley, chopped roasted red peppers from a jar (or chopped fresh tomato if you prefer), chopped garlic

Optional: grated Parmesan or Peccorino Romano cheese, salt and pepper to taste.

Toss all the ingredients and serve pasta.

If you prefer additional ingredients, add anything you like…or simply add grilled chicken, tuna or salmon.
