Garlic, Basil & Parsley Skillet Potatoes
Serves 3-4 (side dish)
These skillet potatoes are surprisingly easy to make because the Roasted Garlic, Basil & Parsley butter does all the flavoring work for you. They make a great side dish with steak, pork chops, or roasted chicken.
INGREDIENTS:
1 lb red or white potatoes
3 Tbsp Roasted Garlic, Basil & Parsley butter
Salt
INSTRUCTIONS:
1. Scrub potatoes, removing any eyes, then dry completely. Cut potatoes into ½” – ¾” cubes.

2. Preheat large skillet over medium heat. Add Roasted Garlic, Basil & Parsley butter and allow to melt completely.
3. Add potatoes to melted butter and cook, stirring or tossing regularly, for 15-20 minutes or until golden brown and fork tender. If potatoes are browned but not yet tender, lower heat. Add more butter as necessary.

4. Remove cooked potatoes from heat and season to taste with salt. Serve immediately.
